Borsch
I've pick this one up in Bulgaria. Presuming I had a tomato soup, the taste was pretty unusual and too my great surprise it was a beetroot soup. One of the only things I didn't like at all, probably due to childhood traumatisms with vinegar soaked beetroots.
Like many great ancestral dishes there's nothing like the original Borsch. When it's made by a local grandmother it's always the real stuff and if it's done by you or me it'll never be.
Borsch is a typical Ukrainian winter soup, the Russians made it their own and for our benifit spread it wherever they went. Being the dish of the commoners, meat was often a luxurious ingredient, if you like to put some meat in the brew you're more then welcome to do so, in some regions they even used to add mushrooms as a meat surrogate. However, I'll try to bring you a poor man's pre-Columbian Borsch, without meat, tomatoes and potatoes. With modern blending technology nevertheless.
What you need
- A dozen of beetroots (about 1kg)
- Vegetable oil
- 2 onions
- 2 carrots
- 2 cloves of garlic
- 1 parsley root
- 1 green cabbage
- 2 bay leaves
- Salt & Pepper
- 2 litters of water
- 2 tablespoons of vinegar
- 1 tablespoon of sugar
- Some sour cream and dill
What you need to do
- If you don't have pre-peeled beetroots start by boiling and skinning them. You might want to put on gloves or rub some oil on your hands to prevent them from turning purple.
- Chop all the vegetables up, never mind the way you cut them up for we'll pass everything through a blender at the end.
- Fry the chopped onions, carrots, parsley root and garlic on a medium heat until the onion start to colour, then add the chopped cabbage, beetroots and bay leaves.
- Season with salt and pepper and let it simmer for 5 minutes on a low fire while you stir the mixture from time to time.
- Add the water, vinegar and sugar. Let it come to a boil and put it on a low fire for 15minutes.
- Season to taste, take the bay leaves out and pass the lot through a blender to obtain a smooth creamy mixture.
- Maybe you'll have a bit too much Borsch, but that's no problem. You can freeze some for later on and it's such a nice dish that it'll be gone before you notice.
- To serve reheat gently the borsch, then top each bowl with a tablespoon of sour cream and sprinkle some dill on top.
* According to an old rule, borsch should be so thick that a wooden spoon stays upright when stuck into the pot.
