Deli Blitz 00003
Coco Chicken
A distillation of years of Asian TV-cooking shows. Like all ingredients are most of the time at home, except the chicken, it's simple and quick. In about 15 minutes you'll travel away from your day in the office or wherever.
What you need
- 2 Chicken breasts
- An onion or 2 sjalots
- Ginger, about a thumb size
- 2 or 3 cloves of garlic
- Salt, Pepper & some cane sugar
- 1 or 2 Red chilli peppers
- A can of coco-milk
- The juice of a lemon or lemongrass
- 1 tablespoon of soya sauce
What you need to do
- Fry the chopped onion, garlic and ginger in some vegetable oil (any vegetable oil will do, except olive, sesame does got my preference).
- When the onion starts to get translucent, add the diced chicken breasts, red chilli peppers and the lemon grass if you didn't went for the juice.
- Season with salt, pepper and cane sugar and let the chicken fry on medium fire until golden.
- Add the coco-milk, soy sauce and lemon juice. Season to taste with salt, pepper and cane sugar.
- Let the lot on a low fire until it start to bubble and it's ready to serve with some rice on the side
- Although there's a chilli in the dish it's very mild, the red chilli is more for decoration then to spice it up. If you use a diced Spanish one or let infuse 2-3 whole Tai ones it should remain mild.
The recipe is so basic that you can replace the chicken with whatever, prawns, pork, beef, broccoli anything you fancy goes ... well maybe not chocolate.

Deli Blitz 00002
Tarrattor
A fresh breeze from the East. Few realise the authentic and tasty culinary treasures of Bulgaria. Like this cold yoghurt/cucumber soup for these hot summer days.
What you need
- 1/2 a litre of yoghurt
- 1/2 a litre of cold water
- 1 Cucumber
- 1 or 2 cloves of garlic
- 4 tablespoons of sunflower oil
- 1 teaspoon of salt
- 2 tablespoons of fresh chopped dill
- Some finely chopped walnuts
What you need to do
- Mix the yoghurt and the water in a large bowl until you got a smooth mixture. Depending on the yoghurt you adapt the water volume.
- Peel and finely chop the cucumber, press the garlic and mix everything together with the dill, oil and salt in the bowl.
- While serving you sprinkle some chopped walnuts on top for the presentation, taste and structure. An ice cube for extra freshness in the serving bowls is optional
- Beware : Garlic lovers, do not underestimate the power of raw garlic, taste it like it is before adding some extra cloves.

Deli Blitz 00001
Balsamic Tarragon grillade
One of the most sublime marinades ever for all grillable fish and shellfish, and perhaps the simplest one too.
What you need
- 1/3 cup olive oil
- 1/3 cup balsamic vinegar
- 2 smal or 1 big tomato
- 3 cloves of garlic
- a bunch of fresh tarragon
- 1/2 a teaspoon of salt
- 1/2 a teaspoon of cayenne pepper
What you need to do
- Chop everything roughly, throw the lot in a blender & let the blender work for you.
- That's basically it, put your fish or shrimp of choice in the marinade for anything more then 10 minutes and start grilling.
- Those who love it spicy can juggle with the cayenne, 1/2 a teaspoon is just enough to give it a nice edge.
