Fooling around for yourself is one thing, but when somebody trust her onlineness to you it's suddenly different. To help Angueliki's post-academic life and jobquest, I gave her a hand with a site that she can modify and maintain quite easily on her own. Like ADSL and cable aren't widely spread in Greece it had to be light to download, furthermore the Greek text should display correctly on all possible settings. I'm particularly proud of the under construction paint job on her future link page.

Risotto
The lady-killer of all dishes. All girls fall for risotto. It's as mysterious as the magic that turn the rice creamy. Do they think the maker of a risotto will be as gentle and patient with them as with the risotto? One might think so, but like modern females don't have a clue of how risotto or anything else is made ... it must be something else that does the trick.
What you need
- Olive oil
- 1 Cup of Arborio rice (about 200gr)
- 1 Large onion or 2 shallots
- A clove of garlic
- A glass of white wine (non-sweet)
- Salt and Pepper
- About a litre of hot stock (hot like warm, not spicy)
- 50gr grated Parmesan cheese
What you need to do
- Cover the bottom of a large frying pan with a high edge, or a medium pot with olive oil.
- Gently fry the chopped onion and garlic until translucent on medium heat, the onion may not start to colour.
- Add the rice and stir the lot well for a minute or two, meanwhile the rice absorbs the flavoured oil.
- Pour half of the wine to the rice, season with salt and pepper and keep stirring until the mixture absorbs the liquid, then add the rest of the wine.
- Now you're making risotto! Keep on stirring and add a ladle of hot stock every time the mixture absorbs the liquid.
- After about 20 minutes the mixture will be smooth and creamy. Right after your last ladle of stock throw the parmesan cheese into the pan and stir the cheese into the mixture.
- Serve immediately.
Note for the feminists. Ladies hold your horses, I'm not a misogynist but admit that most of nowadays girls can't compare to the generations that preceded. Anyway most of the time men take good food for granted and don't appreciate a risotto. This dish is a tribute to all the ladies out there who love the thought that just for them, a guy was stirring this magic brew for a small half hour non-stop.

Won Bread
A schizophrenic Belgian breakfast. Strange how the Flemish call it 'gewonnen brood' (won bread) and the Wallish 'pain perdu' (lost bread). Does one see the glass half full and the other half empty? Or do the 2 P's of pain perdu have a nicer consonance, like Betty Boop's 2 B's? If so, shouldn't I call it 'Lost Loaf' or 'Better Bread'? Ethnic differences aside, here's a great way to make the best out of a near empty kitchen in the morning.
What you need per person
- 1 egg
- a cup of milk (about 250ml)
- 2-3 slices of old hardened bread
- Butter
- Sugar, spice and everything nice
What you need to do
- In a deep plate mix the egg and milk until you got an homogeneous mixture.
- Melt a lump of butter in a pan while you lay a slice of old bread in the mixture (be sure to dip both sides in).
- Fry both sides until they become goldenbrown and lay the slice on the side.
- Repeat this until you run out of slices and-or mixture.
- Eat it while hot with some sugar on top ... or with what you would normally put on pancakes.

Ytong Mitsubishi Kabuki
Years I criticised and mocked design competition entries. 'What's that?!' 'I did better when I was 5' and so on, but never actually participated.
Sitting on the concrete floor of my frosty building site, sketching my electricity, while waiting for some brickwork to dry, I remembered the article about the opening of Mitsubishi's International Design Competition at Car Design News, my wires turned into wheels and I wondered.
Staring at some leftover Ytong bricks, the purpose of the engineers came up, to create a material that combines the quality of stone with the workability of wood. Lets see if they achieved that I thought, everyday I got some dead moments to fill at the building site and I got enough leftovers to do it.
The deadline was 3 months later so I wasn't in a hurry. But from a sketch to a little Ytong prototype to some A2 posters time sure flies.
It changed me, for the first time of my life I finished something I voluntarily started. I entered the ring ready to be judged and mocked. The metamorphosis from a destructive critic into a creative doer.
Realising the mediocrity of my work I still was and am damn proud of it ... because I did that!

Surmi
For more then a century the speciality of my village is the extraordinary culture of edible grapes under glass. It's a shame that we don't include more of that culture in our kitchen. As long that the vineyards are still green, here is a vine-leave recipe from the historic region of Veliko Turnova (Northern Bulgaria).
What you need
- About a dozen of vine-leaves
- vegetable oil (preferably sunflower).
- 1 big onion
- 150gr rice (European rice, risotto/paella style)
- 300gr minced lamb (other mince is also alright)
- A small spoon of paprika (5gr)
- Salt & Pepper
- Culinary string
- 1 litre of tomato juice
- 250gr Yoghurt
What you need to do
- First scald the vine-leaves a minute in boiling water.
- Fry the chopped onion in the oil until they start to get translucent, then lower the fire to medium and add the rice.
- Stir the rice well about so it absorbs some oil and the flavour of the onion, after a minute or two add the mince and continue to stir-fry.
- Season with the paprika, salt & pepper, mix well and when the mince isn't pink/red anymore take the frying pan of the fire.
- Fill the vine-leaves with the mixture and bind them with the culinary string.
- Arrange the filled vine-leaves in your pan and pour the tomato juice over them, if your pan is not high enough do take a saucepan, let the lot simmer gently for at least 30 minutes.
- When serving put a tablespoon of yoghurt on each plate to dip your surmi in and for those who like the combination, the pot of remaining yoghurt on the table.
